Summer Gummies!

Fender and I LOVE fruit snacks.  When it comes to them there are only a few brands that we like and unfortunately they are NOT the healthy versions!  I had to pull out my old recipe, dust it off and use our beach shaped molds before Summer was over!  Here's how to make 'em:

 Gather the following ingredients:

4 T gelatin
6 T sugar
4 T corn syrup
food coloring
flavored extract
silicone trays

1. Mix the gelatin and 1/4 cup of cold water and let sit in a small bowl for 5 minutes until the gelatin is soft.

2. In a small saucepan combine and cook the corn syrup, sugar and 2/3 cups of water over medium heat until all the sugar has melted.

3. Stir in the gelatin and continue stirring until it has melted in the sugar mixture.

4. Add food coloring and flavoring (about a teaspoon of extract usually does the trick!)  I used strawberry, banana, raspberry and orange.

5. Pour the mixture into the molds (I used Ikea ice cube trays - fish and star fish shapes) and let set up about 2 hours before pulling them out of the mold!

6. Enjoy your yummy gummies!
